{{Southwest Salmon Salad}}
Serves 4
Salmon: 2lb Salmon Fillet
2 Tbs Avocado Oil
1 Tsp Smoked Paprika
1 Tsp Chili Powder
Zest of 1 Lime (Don't Skip)
1/2 Tsp Garlic Powder
S&P to Taste
Salad:
4 Cups Kale
1 Can Black Beans (drained & rinsed)
1 Red Bell Pepper, Chopped
1 Mango, Chopped
1 Cup Grape Tomatoes, Halved
1 Can Organic Corn (drained & rinsed)
1/4 Cup Cilantro
1/2 Cup Avocado Dressing (recipe below)
Dressing:
1 Avocado, sliced
1 Garlic Clove
1/4 Cup Cilantro
1/4 Cup Non-Dairy Yogurt
1 Tbs Fresh Lime Juice
3 Tbs Avocado Oil
S&P to taste
1/3 Cup Water
Add to food processor & blend
*Season Salmon and bake at 425 12 to 15 minutes
*Assemble salad goodies in 4 bowls
*Top with Salmon
*Drizzle with Dressing
