Along with our great vendors we shared snacks and recipes that tasted amazing! Today we will be sharing them in this email. YAY!! These recipes come from the well known nutritionist Cara Clark. Dark Chocolate Sea Salt Freezer Fudge
1 cup natural almond butter
1/3 cup coconut oil
1 tsp. vanilla
1/2 cocoa
1/4 teaspoon coarsely ground pink Himalayan Salt
Line small loaf pan with parchment paper. Combine almond butter, coconut oil, honey and vanilla. Microwave for 30 seconds. Then stir in cocoa powder. poor mixture into pan evenly. Dust with salt. Freeze for at least two hours. Cut and serve in one inch squares.
Everything Bagel Popcorn
3 cups air popped popcorn
1 table spoon melted coconut oil
2 tablespoons of nutritional yeast
1 tablespoon Everything Bagel Seasoning
Spiced Ginger Pear Muffins
2 Bartlett pears, cored and diced
1 tablespoon cinnamon, plus extra for sprinkling
2 teaspoons ground ginger
1/4 cup ginger kombucha (or club soda)
1/4 cup raw honey
11/2 cups finely ground almond flour
1/4 cup coconut flour
1/2 arrowroot starch
1/4 cup chopped pecans or walnuts
1 teaspoon baking powder
Pinch of salt
3 eggs, lightly beaten
1 tablespoon coconut oil (melted)
Topping: 1/3 cup chopped (nut of choice) mixed in additional honey and sprinkled with cinnamon
Pre-heat oven to 350. Line muffin tin with liners.
Place pears in mixing bowl, then mix in the spices and ginger or club soda and honey. Let that soak while you mix other ingredients.
In another bowl, sift the flours and arrowroot together. Mix in baking powder and salt. Fold in eggs and melted coconut oil. Gently pour the pear mixture into egg/flour batter. Mix gently mix until batter is well combined.
Divide batter into prepared muffin cups. Sprinkle nuts over top of each muffin. Place in the oven and bake for 22-25 minutes or until golden brown. Once cooked, remove from the oven and let cool for 10 minutes before removing from the pan to cool completely.
